Old Time Country Dance

Simple Fish & Tomato Stew.
Ingredients: 2 tsp olive oil. 2 celery stalks finely chopped. 1 onion finely diced. 2 tomatoes roughly chopped. 2 tsp tomato paste. 1/3 cup white wine. 2 cups vegetable broth. 1 lb cod fillets, cut in 2-in. Directions: In a large skillet, heat oil over medium heat. Cook celery and onion for 3 min. Stir in tomatoes and tomato paste and cook 1 min. Add wine and cook 1 min. Add broth and bring to a boil.
